Recipe: Sicilian Pizza

Ingredients:

  • 2 teaspoons sugar
  • 2 teaspoons salt
  • 2 1/4 teaspoons active dry yeast
  • 1/4 cup (60ml) olive oil

  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 can (28oz) crushed tomatoes
  • 1 teaspoon dried oregano
  • 1 teaspoon dried basil
  • Salt and pepper to taste

For the toppings:

  • 3 cups (340g) shredded mozzarella cheese
  • 1/2 cup sliced black olives
  • 1/2 cup thinly sliced onions
  • 1/4 cup anchovy fillets (optional)
  • Fresh basil leaves
  • Extra virgin olive oil for drizzling


Instructions:

  1. Prepare the Dough:

    • In a large bowl, dissolve the sugar and yeast in warm water. Let it sit for 5 minutes until frothy.
    • Add the olive oil, flour, and salt to the yeast mixture. Mix until a dough forms.
    • Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
    • Place the dough in a lightly oiled bowl, cover, and let it rise in a warm place for 1-2 hours, until doubled in size.
  2. Prepare the Sauce:

    • In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant.
    • Add the crushed tomatoes, oregano, basil, salt, and pepper. Simmer for 15-20 minutes, stirring occasionally. Set aside to cool.
  3. Preheat the Oven:

    • Preheat the oven to 450°F (230°C).
  4. Shape the Dough:

    • Punch down the risen dough and press it into a greased rectangular baking pan (about 12x18 inches). Make sure the dough reaches the edges and is evenly spread.
